Fancy Skillet Cornbread (flourless and sugarless)



Corn Bread

This cornbread goes great with soups or stews. If you would rather stir the cheese into the batter instead of sprinkling it in the middle of the layers of batter, go right ahead.

Makes 9 servings

1 cup yellow cornmeal
1 tablespoon baking powder
1 teaspoon salt
1 large egg
1/4 cup egg substitute
1/4 cup canola oil
7 tablespoons lowfat buttermilk
1 cup fat-free sour cream
2 cups frozen corn kernels
3/4 cup reduced-fat sharp cheddar cheese
6 slices center cut pork bacon or 4 slices LOUIS RICH turkey bacon, cooked until crisp then broken into bits (optional)
  1. Preheat oven to 375 degrees. Coat a 9-inch square pan with canola cooking spray.
  2. Add cornmeal, baking powder and salt together in large bowl and make a well in the center. Add in egg, egg substitute, canola oil, buttermilk and sour cream and blend thoroughly. Fold in the corn kernels.
  3. Pour half of the batter into the prepared pan. Sprinkle cheese over the batter then pour in remaining batter. Sprinkle bacon pieces over the top if desired. Bake for 25 to 40 minutes or until center tests done.
Per serving: 195 calories, 8 g protein, 25 g carbohydrate,
8 g fat (1.6 g saturated fat, 4.3 g monounsaturated fat,
2 g polyunsaturated fat), 29 mg cholesterol, 2.5 g fiber,
500 mg sodium. Calories from fat: 36 percent.
Omega-3 fatty acids = .7 g, Omega-6 fatty acids = 1.3 g
