Winter Salad With Vinaigrette
Use whichever bottled salad dressing you tolerate best for this recipe.
Makes 6 servings
About 1/2 cup light or lowfat bottled vinaigrette dressing of your choice (preferably one with around 3 to 4 grams fat per 2 tablespoon serving that uses olive oil or canola oil) 1 head romaine lettuce, torn into bite-size pieces (about 12 cups) 2 ounces (1/2 cup) shredded reduced-fat Swiss cheese or Jarlsberg Lite 1/2 cup dry roasted cashews 3 tablespoons dried cranberries 1 large apple, cored and diced 1 large pear, cored and sliced
In a large serving bowl, toss together the romaine lettuce, shredded Swiss cheese, cashews, dried cranberries, apple and pear.
Pour dressing of your choice over salad just before serving, and toss to coat.
Per serving: 193 calories, 7 g protein, 22 g carbohydrate, 8 g fat (2 g saturated fat, 4 g monounsaturated fat, 2 g polyunsaturated fat), 5 mg cholesterol, 4 g fiber, 260 mg sodium. Calories from fat: 37 percent. Omega-3 fatty acids = 1 g, Omega-6 fatty acids = 1 g
